VEGAN MEXICAN POWER BOWL

Go meatless and make this delicious meat-free meal. It’s also a budget-friendly meal and makes great left overs for breakfast tortillas! 

INGREDIENTS:

1/2 cup black beans

1/2 cup cooked and cooled lentils

1/3 corn

1 tbsp sliced green onion 

1/4 cup red and green pepper 

1 tbsp minced fresh parsley 

1/2 tsp sea salt

1/2 tsp freshly ground black pepper

HOW TO WHIP IT UP:

Combine all ingredients in a bowl and enjoy! Add a tbsp of homemade salad dressing for a fresh taste. ENJOY!
