Mood Boosting Adaptogenic Mushroom Brownies

I promise you these brownies really are super simple to make – and they’re delicious plus packed with nutritional goodness.

With an underlining hint of a mushroom blend featuring Chaga, Cordyceps and Lions Mane these mood elevating brownies are chewy, moist and packed with a rich chocolate flavor. Mushrooms and chocolate are the perfect duo + they’re the perfect mood boosting and energy boosting treat.

Ok here we go:

Serves 6 mini brownies

1 cup (100g) ground almonds
1 cup (100g)  organic dark chocolate
1/4 cup organic coconut oil
2 tbsp lions mane
2 tbsp chaga
2 tbsp cordyceps

3 tbsp stevia or monk fuit maple syrup
1 tbsp chia seeds + 1 tbsp ground flax seed + 5 tbsp water 1 tsp pure vanilla essence
1 tsp aluminum-free baking powder

Place all dry ingredients in one bowl and combine. Then, place all wet ingredients in another bowl and combine Mix wet and dry ingredients and fold gently to combine – try to avoid over mixing.
Transfer to silicone molds or pan and bake at 160 for around 25-30 minutes.
Remove from oven and allow to cool before removing. ENJOY!
